Dinner For One

This is what I had for dinner the other night when I was home alone - peanut butter and jelly on whole wheat, cut diagonally, sour cream and onion potato chips and milk. This meal is a far cry from the dinners I usually make for DH and I.

I need some help coking for one! I'm tired of my usual fare: frozen meals. Tell me - how do you cook for one? Do you have a favorite cookbook? What's your secret? Please help me get out of the PB&J menu!

I'm not home alone very often, but when I am I usually order a pizza delivery (as DH doesn't like pizza much and I love it) and then have about 3 meals. Add a fruit salad, and I'm a happy camper. I like to treat myself, so I might even go out or stop for take home of something nice, like an entire seafood dinner.

This, I can do! :-) I ate for one for a pretty long time. How long will he be gone? My method was simple. Cook things that can be frozen. You cook (by the 2nd week) every-other-day. The first day you cook a double batch of something, then make up a plate (yes, a real but microwavable plate) from what is left. Put the plate in a large zip-top bag. On the 2nd night, take a meal from last week, vent the bag, and microwave for about 2 minutes. It tastes better than leftovers for some reason, and you only have to cook every other day. Also, check out allrecipes.com. Most of their recipes have a converter, you can tell it you are cooking for one. Hope this helps!
